Crepes are so yummy! They are great for breakfast, for lunch, for dinner, even for dessert if you add some whip cream. I’m not sure where this recipe is from originally, it’s been written in my recipe notebook for years. Here’s a super easy crepe recipe that is great for all the little one’s and not-so little one’s in your family.
You can even make them in advance and freeze them. Just make sure you seperate each one with a piece of parchment paper before you freeze.
1 large egg
1 1/4 cups milk
1 cup flour
1/4 tsp salt (not advisable for under 1 — but optional)
Mix it all together and pour approximately 1/2 cup of batter (maybe a bit less — I’ve never actually measured) into a heated pan on low/medium. The batter is quite runny so tilt the pan to help it spread out. Cook for about 2 minutes then flip. Crepes cook really quick so keep an eye on them.
Stuff with fresh fruit, apple sauce, preserves, cheese, veggies, whip cream… whatever you like!
