Baby Food Friday: Barbecued Chicken Fingers

With BBQ season already here, I am always looking for new recipes to try out. Combine that with something that’s kid friendly AND adult friendly, and that can take a bit more searching. This recipe is a hit with toddlers, kids, and adults. Super easy to make and great for when you have a group of people over that you need to feed quick. It’s also great on skewers for a nice appetizer for adults. This recipe does have honey and lemon juice, so make sure your little one is ready to have these first 😀 .

Barbecued Chicken Fingers (serves 4 – 6)

1 lb boneless, skinless chicken breastsbbq chicken fingers
2 tbsp honey
2 tbsp lemon juice
1 tbsp ketchup (or chili sauce if you want it extra spicy)
1/4 tsp ground cumin
1/2 tsp salt

1. Pat chicken dry and cut each breast into 4 or 5 strips.
2. In a large bowl, combine honey, lemon juice, ketchup and cumin. Add chicken and marinate in refrigerator for up to 8 hours.
3. Just before cooking, stir salt into chicken mixture. Grill chicken pieces for 5 to 7 minutes per side, depending on thickness, until just cooked through.

Serve with roast potatoes, rice, veggies. Also yummy with a yogurt dip for little ones or spicy salsa dips for the adults.
