Baby Food Friday: Watermelon

Who doesn’t love watermelon? Around here we eat is all summer long. But sometimes plain watermelon watermelongisn’t the most exciting. Here’s a couple serving suggestions to dress up good ol’ watermelon.

  • cookie cutters. Slice up your watermelon and use different shaped cookie cutters. Makes it look a little more grown up if you’re having a bunch of people over and little ones like the different shapes too.
  • if you have a little one that can’t pick up and hold the watermelon well, crush some cheerios in a blender and roll the watermelon pieces in the cheerios. Gives it a little bit of grip and makes it a little easier to eat.

Raspberry & Watermelon popsicles (makes 1 1/2 cups or 4 large popsicles)

1/4 watermelon
heaping 1/2 cup fresh raspberries
1/3 – 1/2 cup confectioner’s sugar

Cut the flesh from the watermelon and remove the seeds. Blend the watermelon and raspberries together. Strain and stir in the sugar to taste. Pour into molds and freeze. For a Canada Day variation, make a multi layered popsicle with yogurt. Just freeze between the layers.
