For those of your with an avid gardener in your life (or are attempting a garden for the first time), this recipe is perfect for using up some of the abundant summer squashes that are available this time of year. This one is also great as a side dish for the older kids and adults too. This recipe is suitable for babies 10 months and older, but always check that the ingredients are age appropriate for your little one.
Summer Squash with Apple
Heat the oil in a large frying pan and cook the squash until browned, over a medium heat. Add the apple juice, lemon juice, rosemary and black pepper and reduce the heat.
Cover and simmer for 10-15 minutes, until the squash is cooked through.
Remove and keep warm.
Add the cream to the frying pan and cook, stirring, until thickened and reduced by about half.
Return the squash to the mixture and heat for a few minutes.
Sprinkle with the parsley, chop to size and serve with brown rice and steamed carrots.
